- 2 medium yellow squash
- 1 large red bell pepper
- 3 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried oregano

Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

Slice the 2 zucchinis and 2 yellow squashes into 1/2-inch thick rounds. Cut the 1 red bell pepper into 1-inch pieces, discarding the seeds and stem.

In a large bowl, toss the sliced vegetables with 3 tablespoons olive oil, 1 teaspoon salt, 1/2 teaspoon black pepper, and 1 teaspoon dried oregano until evenly coated.

Spread the vegetables in a single layer on the prepared baking sheet. Do not overcrowd, or they will steam instead of roast.
