- 2 lb potatoes
- 3 tbsp olive oil
- 1 tsp smoked paprika
- 1 cup tomato sauce
- 2 cloves garlic
- 1 tbsp red wine vinegar
- ½ tsp chili flakes
- 1 tsp salt

Preheat oven to 425°F. Cut 2 lb potatoes into 1-inch cubes and place in a large bowl.

Toss potatoes with 2 tbsp olive oil, 1 tsp smoked paprika, and 1/2 tsp salt. Spread on a baking sheet in a single layer.

Roast for 25-30 minutes, flipping halfway, until golden and crispy on the outside and tender inside.

While potatoes roast, make the sauce: heat 1 tbsp olive oil in a small saucepan over medium heat.

Add 2 minced garlic cloves and 1/2 tsp chili flakes; cook until fragrant, about 1 minute.
