Ingredients

  • 2 lb potatoes
  • 3 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 cup tomato sauce
  • 2 cloves garlic
  • 1 tbsp red wine vinegar
  • ½ tsp chili flakes
  • 1 tsp salt

    Preheat oven to 425°F. Cut 2 lb potatoes into 1-inch cubes and place in a large bowl.

    Toss potatoes with 2 tbsp olive oil, 1 tsp smoked paprika, and 1/2 tsp salt. Spread on a baking sheet in a single layer.

    Roast for 25-30 minutes, flipping halfway, until golden and crispy on the outside and tender inside.

    While potatoes roast, make the sauce: heat 1 tbsp olive oil in a small saucepan over medium heat.

    Add 2 minced garlic cloves and 1/2 tsp chili flakes; cook until fragrant, about 1 minute.

    Stir in 1 cup tomato sauce and 1 tbsp red wine vinegar. Simmer for 5 minutes until slightly thickened.

    Season sauce with remaining 1/2 tsp salt. Adjust spice to taste.
