Ingredients

  • 1.5 lb potatoes
  • 1 lb white fish fillets
  • ½ cup pesto
  • ¼ cup heavy cream
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

    Preheat oven to 425°F. Cut 1.5 lb potatoes into 1-inch chunks. Toss with 1 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp pepper on a baking sheet.

    Roast potatoes for 25 minutes, until golden and crisp on edges, then flip and roast 10 more minutes.

    While potatoes roast, pat 1 lb fish fillets dry. Season with remaining 1/2 tsp salt and 1/4 tsp pepper.

    In a small bowl, mix 1/2 cup pesto with 1/4 cup heavy cream until smooth.

    Heat 1 tbsp olive oil in a skillet over medium-high. Add fish fillets and cook 3-4 minutes per side, until opaque and flakes easily.

    Remove potatoes from oven. Drizzle with pesto cream and toss to coat.

    Serve potatoes topped with fish fillets and extra dollops of pesto cream if desired.
