- 1.5 lb potatoes
- 1 lb white fish fillets
- ½ cup pesto
- ¼ cup heavy cream
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper

Preheat oven to 425°F. Cut 1.5 lb potatoes into 1-inch chunks. Toss with 1 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp pepper on a baking sheet.

Roast potatoes for 25 minutes, until golden and crisp on edges, then flip and roast 10 more minutes.

While potatoes roast, pat 1 lb fish fillets dry. Season with remaining 1/2 tsp salt and 1/4 tsp pepper.

In a small bowl, mix 1/2 cup pesto with 1/4 cup heavy cream until smooth.

Heat 1 tbsp olive oil in a skillet over medium-high. Add fish fillets and cook 3-4 minutes per side, until opaque and flakes easily.
