Ingredients
- 2 lb potatoes
- 3 tbsp olive oil
- 2 red chili peppers
- ¼ cup fresh parsley
- 2 cloves garlic
- 1 tsp salt
- ½ tsp black pepper

Preheat oven to 425°F. Cut 2 lb potatoes into 1-inch cubes and place in a large bowl.

Add 3 tbsp olive oil, 1 tsp salt, and 0.5 tsp black pepper to the potatoes. Toss to coat evenly.

Spread potatoes in a single layer on a baking sheet. Roast for 25-30 minutes, flipping halfway, until golden and crispy on the outside.

While potatoes roast, mince 2 garlic cloves and finely chop 2 red chili peppers and 0.25 cup fresh parsley.

In the last 5 minutes of roasting, sprinkle the garlic and chili over the potatoes and return to oven.
