Ingredients
- 2 lb potatoes
- 1 medium onion
- 4 cloves garlic
- 3 tbsp olive oil
- 2 tbsp fresh herbs (such as rosemary or thyme)
- 1 tsp salt
- ½ tsp black pepper

Preheat oven to 425°F. Scrub potatoes and cut into 1-inch wedges. Peel and slice onion into thick wedges. Smash garlic cloves.

In a large bowl, toss potatoes, onion, and garlic with 3 tbsp olive oil, 1 tsp salt, and 1/2 tsp pepper until well coated.

Spread mixture in a single layer on a baking sheet. Roast for 25 minutes, until potatoes are golden and crisp on the edges.

Flip wedges and roast for another 10-15 minutes, until tender when pierced with a fork and deeply browned.

Remove from oven and immediately toss with 2 tbsp chopped fresh herbs. Serve hot.
