Ingredients
- 8 pieces lamb chops
- 4 medium potatoes
- 3 tablespoons olive oil
- 4 cloves garlic
- 2 sprigs fresh rosemary
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 whole lime

Preheat your oven to 425°F (220°C). Cut the 4 potatoes into wedges and place them in a large bowl.

Add 2 tablespoons of the olive oil, 1 teaspoon salt, and 1/2 teaspoon black pepper to the potatoes. Toss to coat evenly.

Spread the potatoes in a single layer on a baking sheet. Roast for 15 minutes while you prepare the lamb.

In a small bowl, mix the remaining 1 tablespoon olive oil, 4 minced garlic cloves, and leaves from 2 rosemary sprigs.

Rub the garlic-rosemary mixture all over the 8 lamb chops, pressing gently to adhere.

After 15 minutes, remove the baking sheet from the oven. Push the potatoes to the sides and place the lamb chops in the center.

Return the sheet to the oven and roast for 12-15 minutes, until the lamb is browned and cooked to your liking (internal temperature 145°F for medium-rare).
