Ingredients
- 4 chops lamb chops
- 2 large russet potatoes
- ½ cup plain yogurt
- 2 cloves garlic
- ¼ cup fresh parsley
- 3 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper

Preheat oven to 400°F. Pat the 4 lamb chops dry and season both sides with 1/2 tsp salt and 1/4 tsp pepper. Let sit at room temperature for 20 minutes.

Grate the 2 large potatoes (peeled if desired) and squeeze out excess moisture using a clean kitchen towel. Toss with remaining 1/2 tsp salt and 1/4 tsp pepper.

Heat 2 tbsp olive oil in a large oven-safe skillet over medium-high. Add the lamb chops and sear until browned, 2-3 minutes per side. Remove chops to a plate.

In the same skillet, add remaining 1 tbsp olive oil. Press the grated potatoes into an even layer. Cook over medium heat until golden on the bottom, about 5 minutes.

Place the lamb chops on top of the rösti. Transfer skillet to oven and roast until lamb reaches desired doneness (135°F for medium-rare), about 8-10 minutes.

Meanwhile, mix 1/2 cup yogurt with 2 minced garlic cloves and 2 tbsp chopped parsley. Season with a pinch of salt.

Rest the lamb and rösti for 5 minutes. Serve the rösti with lamb on top, a dollop of yogurt sauce, and sprinkle with remaining parsley.
