Ingredients
- 1 rack (about 1.5 lb) rack of lamb
- 1 large, sliced into rings onion
- 4 oz cream cheese
- 2 tbsp, chopped fresh herbs (chives, parsley, dill)
- 2 cloves, minced garlic
- 2 tbsp olive oil

Preheat oven to 425°F. Pat the 1 rack of lamb dry and season generously with salt and pepper.

Heat 1 tbsp olive oil in an oven-safe skillet over high heat. Sear the lamb fat-side down until deeply browned, about 3 minutes. Flip and sear 2 minutes more.

Transfer skillet to oven and roast until internal temperature reaches 130°F for medium-rare, about 12-15 minutes. Remove and let rest 5 minutes.

While lamb rests, heat remaining 1 tbsp olive oil in a separate pan. Add 1 large onion (sliced into rings) and cook over medium-high until golden and crispy, about 8 minutes.

Mix 4 oz cream cheese with 2 tbsp chopped fresh herbs and 2 minced garlic cloves. Serve lamb with onion rings, a dollop of herb cheese, and fresh lettuce and cherry tomatoes on the side.
