Ingredients
- 2 lb pork shoulder
- 1.5 lb potatoes
- 2 medium onions
- 3 tbsp olive oil
- 3 cloves garlic
- 1 tsp dried rosemary
- 1 tsp salt
- ½ tsp black pepper

Preheat oven to 425°F. Pat the 2 lb pork shoulder dry and rub all over with 1 tsp salt and 1/2 tsp black pepper.

Cut 1.5 lb potatoes into 1-inch chunks and 2 medium onions into wedges. Mince 3 garlic cloves.

In a large roasting pan, toss potatoes and onions with 2 tbsp olive oil, minced garlic, and 1 tsp dried rosemary. Spread evenly.

Place pork on top of vegetables, rub with remaining 1 tbsp olive oil. Roast for 30 minutes.

Turn vegetables and flip pork. Roast until pork reaches 145°F and potatoes are golden and tender, about 15-20 more minutes.
