- 2 lb pork shoulder
- 2 lb potatoes
- 3 tbsp olive oil
- ¼ cup fresh dill
- 1.5 tsp salt
- 1 tsp black pepper

Preheat oven to 425°F. Pat the 2 lb pork shoulder dry with paper towels, then rub with 1 tsp salt and 1/2 tsp black pepper.

Place the pork in a roasting pan and roast for 30 minutes, until the surface begins to brown.

Meanwhile, cut the 2 lb potatoes into 1-inch chunks. Toss with 2 tbsp olive oil, remaining 1/2 tsp salt, and 1/2 tsp black pepper.

After 30 minutes, add the potatoes around the pork. Drizzle with remaining 1 tbsp olive oil and toss to coat in the pan juices.

Roast for 45-55 minutes, until the pork reaches 145°F and the potatoes are golden and tender when pierced with a fork.

Remove from oven and let rest for 10 minutes. Sprinkle with 1/4 cup chopped fresh dill before serving.
