Ingredients

  • 2 lb pork loin roast
  • 4 cloves garlic
  • 2 tbsp fresh rosemary
  • 1 tbsp fresh thyme
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 medium onion

    Preheat your oven to 375°F. Pat the 2 lb pork loin roast dry with paper towels and let it sit at room temperature for 15 minutes.

    In a small bowl, mash the 4 garlic cloves, 2 tbsp rosemary, 1 tbsp thyme, 2 tbsp olive oil, 1 tsp salt, and 0.5 tsp black pepper into a paste.

    Rub the herb paste all over the pork roast, pressing it onto the surface. Slice the 1 medium onion into thick rings and scatter them in a roasting pan.

    Place the pork on top of the onion rings in the pan. Roast for 35-40 minutes, until the crust is golden and the internal temperature reaches 145°F.

    Remove the pork from the oven and let it rest for 10 minutes on a cutting board. Slice and serve with the roasted onions on top.
