- 1 tbsp olive oil
- 1 tbsp salt
- 1 tsp black pepper

Preheat oven to 450°F (230°C). Pat the 2 lb pork belly dry with paper towels. Score the skin in a crosshatch pattern with a sharp knife, cutting just into the fat, not the meat.

Rub 1 tbsp olive oil all over the pork, especially into the scored skin. Massage 1 tbsp salt and 1 tsp black pepper into the skin and meat, ensuring the salt gets into the cuts.

Place the pork on a wire rack in a roasting pan, skin side up. Roast for 30 minutes, until the skin starts to blister and crackle.

Reduce oven to 375°F (190°C) and continue roasting for 20-25 minutes, until the skin is deep golden and crispy, and the meat is cooked through (internal temperature reaches 145°F/63°C).
