Ingredients

  • 2 lb pork shoulder
  • 4 cloves garlic
  • 1 tsp ground cumin
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp vegetable oil

    Rub the 2 lb pork shoulder all over with the 4 minced garlic cloves, 1 tsp ground cumin, 1 tsp salt, and 1/2 tsp black pepper. Let it sit while you prepare the fire.

    Build a small fire with charcoal and firewood, and let it burn down to glowing coals. Place a grill grate about 6 inches above the coals.

    Brush the pork with the 2 tbsp vegetable oil and place it on the grate. Roast, turning every 5 minutes, until the skin is crispy and the internal temperature reaches 145°F, about 20 minutes total.

    Remove the pork from the grill and let it rest for 5 minutes. Slice thinly and serve hot.
