Ingredients
- 1 whole whole duck
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 bunch fresh herbs (thyme, rosemary)
- 1 medium cucumber
- 1 medium tomato
- ½ cup chili sauce
Instructions

Preheat oven to 375°F (190°C). Pat duck dry with paper towels.

Rub duck all over with salt and pepper, inside and out.

Stuff cavity with fresh herbs. Place duck on a rack in a roasting pan.

Roast for 1 hour 30 minutes, until skin is golden and crispy, internal temp 165°F.

Let duck rest 10 minutes before carving.

Slice cucumber and tomato. Serve duck with vegetables and chili sauce on the side.
