Ingredients
- 12 oz rice noodle rolls
- 8 oz shrimp, peeled and deveined
- 1 medium onion, thinly sliced
- 3 tbsp vegetable oil
- 2 tbsp soy sauce
- 1 cup lettuce, shredded

Heat 2 tbsp vegetable oil in a skillet over medium-high. Add the 1 sliced onion and cook, stirring, until golden and crispy, about 5 minutes. Remove with a slotted spoon and set aside.

In the same skillet, add the 8 oz shrimp and cook until pink and opaque, about 2 minutes per side. Remove and set aside.

Steam the 12 oz rice noodle rolls according to package directions, about 5 minutes, until soft and pliable.

Divide the warm noodle rolls among plates. Top with the 1 cup shredded lettuce, cooked shrimp, and crispy onions. Drizzle with the 2 tbsp soy sauce and serve immediately.
