Ingredients
- 1 cup long-grain white rice
- 1 cup tomato sauce
- ½ cup frozen peas
- ½ medium onion
- 2 cloves garlic
- 2 tbsp vegetable oil
- 1.5 cups chicken or vegetable broth
- ½ tsp salt

Rinse the 1 cup rice in a fine-mesh strainer until the water runs clear, then shake dry.

Heat the 2 tbsp vegetable oil in a medium saucepan over medium heat. Add the 1/2 diced onion and cook until soft and translucent, about 5 minutes.

Add the 2 minced garlic cloves and cook until fragrant, about 30 seconds. Stir in the 1 cup tomato sauce and cook, stirring, until slightly darkened, about 2 minutes.

Add the 1 cup rice and stir to coat every grain with the sauce. Cook for 2 minutes, toasting lightly.

Pour in the 1.5 cups broth and 1/2 tsp salt. Bring to a boil, then reduce heat to low, cover, and simmer until liquid is absorbed and rice is tender, about 15-20 minutes.

Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork and stir in the 1/2 cup frozen peas (they'll warm through from the residual heat).
