Ingredients

  • 1 cup red lentils, rinsed
  • ½ cup bulgur wheat
  • 1 whole lemon (zested + juiced)
  • ½ tsp red pepper flakes
  • ¼ cup fresh mint or parsley, finely chopped
  • 8 leaves lettuce leaves (butter or green leaf)

Instructions

    Bring 2 cups water to a boil. Add lentils and bulgur, stir once, then remove from heat.

    Cover and let sit for 8 minutes until grains soften and liquid absorbs completely.

    Transfer to a bowl. Add lemon zest, lemon juice, red pepper flakes, salt, pepper, and mint.

    Stir until combined, then let cool for 2 minutes so the mixture is handleable.

    Wet your hands slightly. Roll mixture into 1.5-inch balls, packing gently but firmly.
