Ingredients

  • 2 cups mixed red berries
  • 2 cups milk
  • 3 tbsp cornstarch
  • ¼ cup sugar
  • 1 tsp vanilla extract
  • ½ cup heavy cream

Instructions

  1. 1

In a medium saucepan, whisk together the 2 cups milk, 3 tbsp cornstarch, and 1/4 cup sugar until smooth. Cook over medium heat, stirring constantly, until the mixture thickens and just begins to bubble, about 5-7 minutes.

  2. 2

Remove the custard from heat and stir in the 1 tsp vanilla extract. Pour the custard into serving glasses or bowls and let cool for 5 minutes.

  3. 3

While the custard cools, gently toss the 2 cups mixed red berries with a little sugar if desired. Spoon the berries over the custard.

  4. 4

Whip the 1/2 cup heavy cream until soft peaks form. Top each dessert with a dollop of whipped cream and garnish with fresh mint leaves if you have them.
