Ingredients
- 1 lb beef sirloin or chuck, cut into 1-inch cubes
- 3 medium shallots, chopped
- 4 clove garlic cloves, minced
- 1 tsp ground turmeric
- 2 tbsp soy sauce
- 3 cups beef broth
- 2 cups cooked steamed white rice
- 2 whole salted duck eggs
- ½ cup krupuk (prawn crackers)
- 2 tbsp sambal (chili paste)
- 1 cup fresh bean sprouts, blanched 30 seconds
- 2 whole lime wedges

Heat 2 tbsp oil in a large pot over medium-high. Brown beef in batches, 2 min per batch, then set aside.

In the same pot, cook shallots and garlic until fragrant, about 1 minute. Stir in turmeric.

Return beef to pot. Add soy sauce and beef broth, then bring to a simmer. Cook 10 minutes until beef is tender.

While soup simmers, soft-boil the duck eggs in a small pot of water, 6–7 minutes for runny yolks.

Taste soup and season with salt and pepper. Divide rice between two deep bowls.

Ladle soup over rice, top with halved duck egg, krupuk, bean sprouts, sambal, and a lime wedge. Serve hot.
