Ingredients
- 1 pound beef tenderloin, finely chopped
- 1 medium shallot, minced
- 2 tablespoons capers, drained and chopped
- ¼ cup fresh parsley, chopped
- 1 tablespoon Dijon mustard
- 1 large egg yolk
- 1 tablespoon olive oil
- ½ teaspoon salt and black pepper

Place the 1 lb finely chopped beef in a bowl and chill in the freezer for 10 minutes until very cold but not frozen.

In a small bowl, mix the 1 minced shallot, 2 tbsp chopped capers, 1 tbsp Dijon mustard, 1 egg yolk, and 1 tbsp olive oil until combined.

Add the chilled beef and 1/4 cup chopped parsley to the bowl; season with 1/2 tsp salt and a few grinds of black pepper.

Gently fold the mixture with a spatula until just combined, being careful not to overwork the meat.

Taste a tiny bit and adjust seasoning if needed, then mound the tartare onto a chilled plate.
