Ingredients

  • 2 packages ramen noodles
  • 8 pieces frozen meatballs
  • 4 slices char siu (barbecued pork)
  • 2 heads bok choy
  • 4 cups chicken broth
  • 2 tbsp soy sauce

Instructions

  1. 1

In a large pot, bring 4 cups chicken broth and 2 tbsp soy sauce to a boil over high heat, then reduce to a simmer.

  2. 2

Add 8 frozen meatballs and 2 heads bok choy (halved) to the broth. Simmer until meatballs are heated through and bok choy is tender, about 8 minutes.

  3. 3

Meanwhile, cook 2 packages ramen noodles according to package directions, then drain and divide between 2 bowls.

  4. 4

Ladle the hot broth, meatballs, and bok choy over the noodles. Top with 4 slices char siu and serve immediately.

  5. 5

Optional: add a soft-boiled egg, chili oil, or sliced scallions if you have them.
