Ingredients
- 1 rack (about 1.5 lb) rack of lamb
- 2 tbsp chopped fresh herbs (rosemary, thyme, parsley)
- 2 tbsp Dijon mustard
- ½ cup panko breadcrumbs
- 2 tbsp olive oil
- 2 cups mixed greens

Preheat oven to 425°F. Pat the 1 rack of lamb dry and season generously with salt and pepper.

Heat 1 tbsp olive oil in an oven-safe skillet over high heat. Sear the lamb fat-side down until deeply browned, about 3 minutes. Flip and sear 2 minutes more.

Brush the lamb with 2 tbsp Dijon mustard, then press 0.5 cup panko mixed with 2 tbsp chopped herbs onto the top.

Transfer skillet to oven and roast until internal temperature reaches 130°F for medium-rare, about 12-15 minutes. Let rest 5 minutes.

Toss 2 cups mixed greens with remaining 1 tbsp olive oil and a pinch of salt. Slice lamb between bones and serve over greens, garnished with berries if desired.
