  • 1 lb fresh nopales (cactus paddles)
  • 2 count garlic cloves, minced
  • 1 count lime
  • 2 tbsp olive oil
  • 6 count corn tortillas
  • 1 pinch salt and pepper

Instructions

    Trim the edges and base from each nopale, then cut into 1/2-inch strips.

    Warm tortillas in a dry skillet over medium heat, flipping once, until pliable.

    Heat olive oil in a large skillet over medium-high until it shimmers.

    Add nopal strips and cook without stirring for 2 minutes until edges char.

    Stir in garlic, cook 30 seconds until fragrant, then toss nopales.

    Cook 2 more minutes, stirring occasionally, until tender and charred.

    Squeeze half the lime over the skillet, season with salt and pepper.
