Ingredients

  • 1 lb nopales (cactus paddles), cleaned
  • ½ cup sour cream
  • 1 whole lime (juiced)
  • 8 whole corn tortillas
  • ½ whole white onion
  • ¼ cup fresh cilantro, chopped
  • 2 tbsp olive oil

Instructions

    Pat nopales dry with paper towels. Slice into 1/2-inch strips, removing the flat edges.

    Stir sour cream with lime juice and a pinch of salt until smooth. Set aside.

    Dice onion finely. Warm tortillas in a dry skillet over medium heat, 20 seconds per side.

    Heat oil in a large skillet over medium-high until it shimmers, ~90 seconds.

    Add nopales in a single layer. Cook 5 minutes without stirring until edges brown and char.

    Stir and cook 3 more minutes until tender and liquid has evaporated. Season with salt and pepper.
