Ingredients

  • 8 oz smoked pork sausage
  • 2 cans (15 oz each) canned black beans, drained
  • ½ cup orange juice
  • 3 cups collard greens, chopped
  • 2 cups cooked white rice
  • 1 whole navel orange

Instructions

  1. 1

Slice sausage into 1/4-inch rounds. Heat a large skillet over medium-high until hot, ~90 seconds.

  2. 2

Add sausage and cook without stirring for 2 minutes until edges brown, then stir and cook 1 minute more.

  3. 3

Add black beans and orange juice, stir once, and simmer until liquid reduces and beans look glossy, ~5 minutes.

  4. 4

Push feijoada to the side of the skillet. Add collard greens and a pinch of salt, stir until wilted, ~90 seconds.

  5. 5

Divide rice between two bowls. Top with feijoada and greens. Slice the orange and lay on the side.

  6. 6

Serve hot with a squeeze of fresh orange over each bowl.
