Ingredients

  • 12 oz pork sausage, sliced into 1/2-inch rounds
  • 3.5 cups canned black beans (2 cans), drained and rinsed
  • 1.5 cups chicken or vegetable broth
  • ½ medium white onion, diced
  • 1 whole bay leaf
  • 3 cups fresh collard greens, shredded
  • 2 cups cooked white rice (for serving)
  • 1 whole orange, sliced (for serving)

Instructions

    Heat a large skillet over medium-high. Add sausage slices and brown, stirring occasionally, until edges curl and render, ~5 minutes.

    Add diced onion to the pan. Cook, stirring, until softened and fragrant, ~2 minutes.

    Pour in broth and black beans. Drop in bay leaf. Bring to a simmer and cook uncovered for 8 minutes, stirring occasionally.

    Stir in shredded collard greens and cook until wilted, about 2 minutes. Season with salt and pepper to taste.
