Ingredients

  • 1 cup all-purpose flour
  • ½ cup pumpkin puree
  • 1 large egg
  • ¾ cup milk
  • ¾ cup Greek yogurt
  • 1.5 tsp ground cinnamon
  • 2 tsp baking powder

Instructions

    Whisk together flour, 1 tsp cinnamon, baking powder, salt, and sugar in a bowl.

    In another bowl, mix pumpkin puree, egg, and milk until smooth.

    Pour wet into dry and stir just until combined — batter should be slightly lumpy.

    Heat a nonstick skillet or griddle over medium until a drop of water sizzles.

    Pour 1/4-cup batter per pancake and cook until edges look set and bottom is golden, ~2 minutes.

    Flip and cook another 90 seconds. Transfer to a plate.

    Stir Greek yogurt with remaining 0.5 tsp cinnamon and drizzle over warm pancakes.
