Ingredients

  • 2 lb pork shoulder, boneless
  • 1 can (12 oz) cola
  • 1 cup bbq sauce

Instructions

  1. 1

Cut pork shoulder into 2-inch chunks, breaking it up into pieces that fit comfortably in a large skillet.

  2. 2

Heat oil in a large skillet over medium-high until shimmering, then add pork and brown hard on all sides, ~8 minutes.

  3. 3

Pour cola and BBQ sauce over the pork, scraping up any browned bits from the bottom.

  4. 4

Simmer uncovered on medium for 10 minutes, stirring occasionally, until pork is fork-tender.

  5. 5

Shred the pork directly in the skillet using two forks, breaking it into bite-sized pieces.

  6. 6

Serve hot, spooning sauce over each portion.
