  • 2.5 cups all-purpose flour
  • 1 tablespoon instant yeast
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 cup warm water
  • ¼ cup baking soda
  • 2 tablespoons sesame seeds
  • 2 tablespoons butter

    In a large bowl, mix 2.5 cups flour, 1 tbsp yeast, 1 tbsp sugar, and 1 tsp salt. Add 1 cup warm water and stir until a shaggy dough forms.

    Turn dough onto a floured surface and knead until smooth and elastic, about 5-7 minutes. Cover and let rest for 10 minutes.

    Preheat oven to 425°F. Bring a large pot of water to a boil, then add 1/4 cup baking soda (careful—it will foam).

    Divide dough into 8 pieces. Roll each into a 10-inch rope. Boil each rope for 30 seconds, turning once, until slightly puffed.

    Place boiled sticks on a parchment-lined baking sheet. Brush with 2 tbsp melted butter and sprinkle with 2 tbsp sesame seeds.

    Bake until deep golden brown, about 12-15 minutes. Let cool on a wire rack for 5 minutes before serving.
