Ingredients
- 12 large shrimp
- 8 oz noodles
- 2 heads bok choy
- ½ cup kimchi
- 4 cups chicken broth
- 2 tbsp soy sauce
- 2 cloves garlic
- 1 tbsp vegetable oil

Peel and devein the 12 large shrimp, reserving the shells. Mince the 2 garlic cloves and slice the 2 bok choy heads in half lengthwise.

Heat the 1 tbsp vegetable oil in a large pot over medium heat. Add the shrimp shells and cook until pink and fragrant, about 3 minutes.

Add the 4 cups chicken broth and 2 tbsp soy sauce to the pot. Bring to a boil, then reduce heat and simmer for 10 minutes. Strain the broth and discard the shells.

Return the broth to the pot and bring to a simmer. Add the 8 oz noodles and cook according to package directions until just tender, about 4-6 minutes.

Add the shrimp and bok choy to the pot. Cook until the shrimp are pink and opaque and the bok choy is bright green, about 3 minutes.

Ladle the noodles, shrimp, and bok choy into bowls. Top each with a spoonful of the 0.5 cup kimchi and serve hot.

Stir in extra soy sauce or chili flakes if you like it saltier or spicier.
