Ingredients
- 1.5 lb potatoes
- 3 tbsp olive oil
- 1 medium onion
- 2 cloves garlic
- 2 tbsp tomato paste
- 1 tsp smoked paprika
- ½ tsp chili flakes
- 1 tsp salt

Cut the 1.5 lb potatoes into 1-inch cubes. Place in a large pot, cover with cold water, add 1 tsp salt, and bring to a boil. Cook until just tender, about 8 minutes; drain well.

Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add the potatoes in a single layer and cook without stirring too often until golden and crispy on all sides, about 10 minutes.

While potatoes cook, finely chop the 1 medium onion and mince the 2 garlic cloves. In a small bowl, mix the 2 tbsp tomato paste, 1 tsp smoked paprika, and 1/2 tsp chili flakes with 1/4 cup water.

Remove potatoes from skillet and set aside. Reduce heat to medium, add remaining 1 tbsp olive oil, onion, and garlic. Cook until soft and fragrant, about 3 minutes.

Pour the tomato mixture into the skillet. Stir and simmer until thickened slightly, about 2 minutes. Season with salt to taste.

Return the crispy potatoes to the skillet. Toss to coat evenly with the spicy sauce. Cook for 1 minute until heated through.
