  • 4 medium potatoes
  • 1 medium onion
  • 1 large egg
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 3 tablespoons vegetable oil
  • 4 links sausages
  • 2 cups sauerkraut

    Grate the potatoes and onion coarsely. Squeeze out excess liquid using a clean kitchen towel.

    In a bowl, mix the grated potato-onion mixture with egg, flour, and salt until well combined.

    Heat 2 tablespoons of oil in a large skillet over medium-high heat. Drop spoonfuls of the potato mixture, flattening into pancakes.

    Cook until golden brown and crispy, about 3-4 minutes per side. Transfer to a plate and keep warm. Repeat with remaining batter, adding more oil if needed.
