Ingredients
- 1.5 lb potatoes
- ¾ lb beef stew meat
- 1 medium onion
- 2 tbsp tomato paste
- 2 tbsp paprika
- 3 cups beef broth
- 1 small red chili pepper
- ¼ cup parsley

Cut the 1.5 lb potatoes into 1-inch chunks and the 0.75 lb beef into bite-sized pieces. Finely chop the 1 medium onion and mince the 1 small red chili pepper.

Heat 1 tbsp oil in a large pot over medium-high. Add the beef and cook until browned on all sides, about 5 minutes. Remove and set aside.

Reduce heat to medium. Add the chopped onion and chili to the pot, cooking until soft, about 4 minutes.

Stir in the 2 tbsp tomato paste and 2 tbsp paprika, cooking for 1 minute until fragrant.

Return the beef to the pot. Add the 3 cups beef broth and the potatoes. Bring to a boil, then reduce to a simmer.

Cover and simmer until potatoes are tender and beef is cooked through, about 25 minutes. Season with salt and pepper.

Stir in the 0.25 cup chopped parsley just before serving. Serve hot with bread if desired.
