Ingredients

  • 2 large potatoes
  • 1.5 cups all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons olive oil

    Boil the 2 large potatoes in salted water until fork-tender, about 20 minutes. Drain and let cool slightly, then peel and mash until smooth.

    On a floured surface, mix the mashed potatoes with 1.5 cups flour and 1 teaspoon salt until a soft dough forms. Knead gently for 1-2 minutes, just until combined.

    Divide the dough into 4 parts. Roll each into a 1-inch thick rope, then cut into 1-inch pieces. Press each piece with a fork to create ridges.

    Bring a large pot of salted water to a boil. Drop in the gnocchi in batches, cooking until they float to the surface, about 2-3 minutes. Remove with a slotted spoon.

    Heat 2 tablespoons olive oil in a skillet over medium heat. Add the cooked gnocchi and sauté until lightly golden, about 3-4 minutes. Season with salt and serve warm.
