Ingredients

  • 2 lb potatoes
  • 1.5 cup all-purpose flour
  • 1 large egg
  • 1 tsp salt
  • 8 cup water

    Peel and chop the 2 lb potatoes into 1-inch chunks. Boil in salted water until fork-tender, about 15-20 minutes. Drain well and let cool slightly.

    Mash the potatoes until smooth. Let cool completely, then mix in 1.5 cups flour, 1 egg, and 1 tsp salt until a soft dough forms.

    On a floured surface, shape the dough into a log and cut into 8 equal pieces. Roll each piece into a smooth ball.

    Bring 8 cups water to a gentle boil in a large pot. Drop the dumplings in, working in batches if needed. Cook until they float to the surface, about 10-12 minutes.
