Ingredients
- 500 g potatoes
- 200 g all-purpose flour
- 2 eggs
- 2 tbsp fresh herbs (chives or parsley)
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp olive oil

Peel and grate the 500g potatoes, then squeeze out excess moisture using a clean kitchen towel.

In a large bowl, mix the grated potatoes with 200g flour, 2 eggs, 2 tbsp herbs, 1 tsp salt, and 0.5 tsp pepper until well combined.

Heat 2 tbsp olive oil in a large non-stick skillet over medium heat. Scoop the potato mixture into the pan, pressing into an even 2cm-thick round.

Cook for 8-10 minutes until the bottom is golden and crispy, then carefully flip the bread using a plate.

Cook the other side for another 8-10 minutes until golden and cooked through. The bread should feel firm and sound hollow when tapped.

Slide onto a cutting board, let rest for 5 minutes, then slice into wedges and serve warm.
