Ingredients
- 4 medium potatoes
- 3 tbsp poppy seeds
- 1 large onion
- 3 cloves garlic
- 1 tsp turmeric
- 2 tbsp vegetable oil
- 1 tsp salt
- 1.5 cups water

Peel and cube the 4 potatoes into 1-inch pieces. Soak the 3 tbsp poppy seeds in 1/4 cup warm water for 10 minutes, then drain.

In a blender, combine the soaked poppy seeds, 1 chopped onion, and 3 garlic cloves. Blend into a smooth paste, adding 1-2 tbsp water if needed.

Heat the 2 tbsp vegetable oil in a pan over medium heat. Add the potato cubes and cook, stirring occasionally, until lightly golden, about 5 minutes.

Add the poppy seed paste and 1 tsp turmeric. Stir and cook for 2 minutes until fragrant and the paste darkens slightly.

Pour in 1.5 cups water and add 1 tsp salt. Bring to a boil, then reduce heat to low, cover, and simmer until potatoes are fork-tender, about 15-20 minutes.
