Potato and Meatball Curry

Ingredients
- 1 lb ground beef
- 2 medium potatoes
- 1 medium onion
- 3 cloves garlic
- 15 oz tomato sauce
- 2 tbsp curry powder
- 1 whole green chili
- ¼ cup fresh cilantro

In a bowl, mix the 1 lb ground beef with 1 tbsp curry powder and a pinch of salt. Roll into 12 small meatballs, about 1 inch each.

Peel and dice the 2 medium potatoes into 1 inch cubes. Finely chop the 1 medium onion and mince the 3 garlic cloves.

Heat 2 tbsp oil in a large skillet over medium-high. Add the meatballs and cook until browned on all sides, about 5 minutes. Remove and set aside.

In the same skillet, add the chopped onion and garlic. Cook over medium until soft and golden, about 5 minutes.

Stir in the 15 oz tomato sauce, 1 cup water, remaining 1 tbsp curry powder, and the whole green chili. Bring to a simmer.

Add the diced potatoes and browned meatballs. Cover and simmer until potatoes are tender and meatballs are cooked through, about 20 minutes.

Stir in the chopped cilantro and season with salt. Serve hot with rice or bread.
