Potato and Cheese Pasta

Ingredients
- 8 oz pasta
- 1 large potato
- 1 cup shredded mozzarella cheese
- 2 tbsp olive oil
- 2 cloves garlic
- 2 tbsp fresh parsley

Bring a large pot of salted water to a boil. Add the 8 oz pasta and 1 large potato (peeled and diced into 1/2-inch cubes). Cook until pasta is al dente and potato is tender, about 10-12 minutes.

Reserve 1/2 cup of the pasta water, then drain the pasta and potato.

In the same pot, heat 2 tbsp olive oil over medium heat. Add 2 minced garlic cloves and cook until fragrant, about 1 minute.

Return the pasta and potato to the pot. Add 1 cup shredded mozzarella and 1/4 cup of the reserved pasta water. Toss over low heat until the cheese melts and coats everything, about 2 minutes. Add more pasta water if needed.

Season with salt and pepper, then stir in 2 tbsp chopped fresh parsley. Serve immediately.
