Ingredients

  • 1.5 lb pork loin, thinly sliced
  • 4 cloves garlic, minced
  • ¾ cup white wine
  • 1 whole bay leaf
  • 4 whole crusty rolls or baguette
  • 1 pinch salt and pepper to taste

Instructions

  1. 1

Heat olive oil in a large skillet over medium-high heat until shimmering, about 90 seconds.

  2. 2

Working in batches, sear pork slices 90 seconds per side without moving until golden. Transfer to a plate.

  3. 3

Add minced garlic to the skillet and cook, stirring, until fragrant, about 30 seconds.

  4. 4

Pour white wine into the skillet, scraping up browned bits from the bottom with a wooden spoon.

  5. 5

Return pork and bay leaf to the skillet. Simmer uncovered for 8–10 minutes until sauce reduces slightly.

  6. 6

Season with salt and pepper. Remove bay leaf.

  7. 7

Split rolls and pile pork and sauce generously into each. Serve immediately.
