Ingredients

  • 2 lb pork trotters
  • 2 leaf bay leaf
  • ½ cup cilantro
  • 2 whole red chili peppers
  • 1 medium onion
  • 2 medium tomato
  • 3 tbsp dark soy sauce
  • 4 cup water

Instructions

    Rinse the 2 lb pork trotters and pat dry. Heat a large pot over medium-high, add the trotters and sear until browned on all sides, about 8 minutes.

    Add the 1 sliced onion and 2 chopped tomatoes to the pot. Cook, stirring, until the onion softens, about 5 minutes.

    Stir in the 3 tbsp dark soy sauce, 2 whole red chili peppers, and 2 bay leaves. Pour in the 4 cups water, scraping up any browned bits.

    Bring to a boil, then reduce heat to low. Cover and simmer until the meat is tender and falling off the bone, about 1.5 hours.

    Uncover and simmer for another 15 minutes to thicken the sauce slightly. Season with salt and pepper to taste.

    Stir in the 0.5 cup chopped cilantro just before serving. Serve hot with rice or crusty bread.
