Ingredients

  • 1 lb pork tenderloin
  • 1 medium zucchini
  • 1 medium onion
  • 1 lb french fries
  • ½ cup mayonnaise
  • 2 tbsp olive oil

Instructions

  1. 1

Cut the 1 lb pork tenderloin into 1-inch cubes. Slice the 1 zucchini and 1 onion into thick chunks. Thread pork, zucchini, and onion onto skewers.

  2. 2

Brush the skewers with 2 tbsp olive oil and season generously with salt and pepper. If you have dried oregano, sprinkle it on for extra flavor.

  3. 3

Cook the 1 lb french fries according to package directions, usually 15-20 minutes in a 425°F oven until golden and crispy.

  4. 4

While fries cook, grill the skewers over medium-high heat for 8-10 minutes, turning occasionally, until pork is browned and cooked through with no pink inside.

  5. 5

Serve the hot skewers with the crispy fries and 1/2 cup mayonnaise for dipping.
