Ingredients
- 1.5 lb pork shoulder
- 6 dried red chilies
- 2 medium onion
- 6 cloves garlic
- 1 inch ginger
- ¼ cup cider vinegar
- 2 tbsp vegetable oil
- 1 tsp salt

Cut the 1.5 lb pork shoulder into 1-inch cubes. In a pot, cover with water and boil until tender, about 20 minutes. Reserve 1 cup of the cooking liquid.

In a blender, combine the 6 dried red chilies (soaked in hot water for 10 minutes), 2 chopped onions, 6 garlic cloves, 1 inch ginger, and 0.25 cup cider vinegar. Blend into a smooth paste.

Heat the 2 tbsp vegetable oil in a large skillet over medium heat. Add the spice paste and cook, stirring, until fragrant and the oil separates, about 5 minutes.

Add the boiled pork cubes and 1 tsp salt to the skillet. Stir to coat with the paste.

Pour in the reserved 1 cup pork cooking liquid. Simmer uncovered, stirring occasionally, until the sauce thickens and clings to the pork, about 10 minutes. The pork should be glossy and the sauce reduced.

Taste and adjust salt or vinegar if needed. Serve hot with rice or bread.
