Ingredients

  • ¾ lb ground pork
  • 3 cups coleslaw mix
  • 3 tbsp soy sauce
  • 1 tbsp fresh ginger, minced
  • 2 cups cooked rice (white or brown)
  • 2 whole eggs

Instructions

    Heat oil in a large skillet over medium-high. Cook ground pork, breaking it into small pieces with a spoon, until no pink remains, ~6 minutes.

    Add minced ginger and stir for 30 seconds until fragrant, then add coleslaw mix and soy sauce.

    Toss the slaw and pork together over medium heat until slaw is slightly softened, ~3 minutes.

    Push the pork-slaw mixture to the side of the skillet. Crack eggs into the empty space and fry until whites set but yolks jiggle, ~2 minutes.

    Divide cooked rice between two bowls. Top each with half the pork-slaw mixture and one fried egg.
