Ingredients
- ¾ lb ground pork
- 3 tbsp soy sauce
- 1.5 tbsp brown sugar
- 1 tbsp rice wine vinegar
- 2 cups cooked white rice
- 2 whole eggs
- 2 tbsp scallions, sliced
- ½ tsp chili oil or chili flakes

Heat 1 tbsp oil in a large skillet over medium-high heat. Brown the ground pork, breaking it up with a spoon, until no pink remains, ~5 minutes.

Add soy sauce, brown sugar, and rice wine vinegar to the pork. Stir until the liquid reduces and coats the meat in a glossy glaze, ~3 minutes.

Push the pork to the side of the skillet. Add 1 tbsp fresh oil to the empty side and crack both eggs into it.

Fry the eggs until whites set but yolks still jiggle, ~3 minutes. Season with salt and pepper.

Divide rice between two bowls. Top each with glazed pork, a fried egg, scallions, and a pinch of chili oil.
