Ingredients

  • 1 lb ground pork
  • 1 cup cherry tomatoes
  • 1 medium red onion
  • 2 cloves garlic
  • 4 slices bread
  • 4 large eggs
  • 2 tbsp dill
  • 4 medium radishes

    Heat 1 tbsp olive oil in a large skillet over medium-high. Add 1 lb ground pork and cook, breaking it up, until browned, about 8 minutes. Season with salt and pepper.

    Add 1 sliced red onion and 2 minced garlic cloves to the pork. Cook until the onion is soft, about 5 minutes.

    Stir in 1 cup halved cherry tomatoes. Cook until they burst and release their juices, about 5 minutes. Add 1/4 cup water and simmer until slightly thickened, about 5 minutes.

    While the ragu simmers, toast 4 slices of bread until golden and crisp.

    Bring a pot of water to a gentle simmer. Crack 4 eggs into a small bowl, then slide them into the water. Poach until whites are set but yolks are runny, about 3 minutes. Remove with a slotted spoon.

    Spoon the ragu over the toast. Top each with a poached egg, then garnish with 2 tbsp chopped dill and 4 thinly sliced radishes. Serve immediately.
