Ingredients

  • 2 lbs pork knuckle
  • 1 lb potatoes
  • 2 medium carrots
  • 1 medium zucchini
  • 1 large onion
  • 4 cups chicken broth
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

    Season pork knuckle with salt and pepper. Sear in a large pot over medium-high heat until browned on all sides, about 8 minutes.

    Add chopped onion and cook until soft, 3 minutes. Pour in chicken broth and bring to a boil.

    Reduce heat to low, cover, and simmer for 1.5 hours until pork is tender.

    Add diced potatoes and carrots. Simmer uncovered for 20 minutes.
