- 3 medium potatoes
- 8 oz mushrooms
- 1 medium onion
- 3 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper

Pat the 2 pork chops dry and season both sides with 1/2 tsp salt and 1/4 tsp pepper. Let sit at room temperature for 10 minutes.

Slice the 3 potatoes into 1/4-inch rounds and the 1 onion into thin strips. Heat 2 tbsp olive oil in a large skillet over medium-high.

Add the potatoes and onion to the skillet, season with remaining salt and pepper, and cook, stirring occasionally, until potatoes are golden and tender, about 12 minutes.

Push potatoes to one side, add 1 tbsp olive oil, and place the pork chops in the skillet. Cook until browned and cooked through (145°F internal), about 4-5 minutes per side. Remove chops and set aside.
