Ingredients

  • 2 whole pork chops
  • 3 medium potatoes
  • 8 oz mushrooms
  • 1 medium onion
  • 3 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  1. 1

Pat the 2 pork chops dry and season both sides with 1/2 tsp salt and 1/4 tsp pepper. Let sit at room temperature for 10 minutes.

  2. 2

Slice the 3 potatoes into 1/4-inch rounds and the 1 onion into thin strips. Heat 2 tbsp olive oil in a large skillet over medium-high.

  3. 3

Add the potatoes and onion to the skillet, season with remaining salt and pepper, and cook, stirring occasionally, until potatoes are golden and tender, about 12 minutes.

  4. 4

Push potatoes to one side, add 1 tbsp olive oil, and place the pork chops in the skillet. Cook until browned and cooked through (145°F internal), about 4-5 minutes per side. Remove chops and set aside.

  5. 5

Add the 8 oz mushrooms to the skillet and cook, stirring, until they release liquid and brown, about 5 minutes.

  6. 6

Return the pork chops to the skillet, nestle among potatoes and mushrooms, and serve hot.
