Ingredients
- 2 whole pork chops
- 4 medium potatoes
- 2 cups broccoli florets
- 2 cups cauliflower florets
- 1 cup heavy cream
- 2 tbsp butter
- 1 tsp salt
- ½ tsp black pepper

Peel and quarter the 4 potatoes, then place in a pot with salted water. Bring to a boil and cook until fork-tender, about 15 minutes.

While potatoes cook, season the 2 pork chops with 1/2 tsp salt and 1/4 tsp pepper. Heat a large skillet over medium-high and sear chops until golden and cooked through, about 4-5 minutes per side. Remove and rest.

In the same skillet, add the 1 cup heavy cream and remaining salt and pepper. Simmer until slightly thickened, about 3 minutes, scraping up browned bits.

Steam the 2 cups broccoli and 2 cups cauliflower in a steamer basket over boiling water until bright and tender, about 5 minutes.

Drain potatoes, add 2 tbsp butter and a splash of cream from the sauce, then mash until smooth. Season to taste.
