Pork Bone Potato Stew

Ingredients

  • 2 lb pork neck bones
  • 3 medium potatoes
  • 8 oz tofu
  • 1 cup kimchi
  • 2 tbsp gochujang
  • 2 tbsp soy sauce
  • 4 stalks green onions
  • 6 cups water

Instructions

    Place the 2 lb pork bones in a large pot, cover with water, bring to a boil, then drain and rinse. This removes impurities.

    Return bones to the pot with 6 cups water and 1 cup kimchi. Bring to a boil, then reduce heat to low and simmer for 20 minutes.

    Add 3 medium potatoes (peeled and quartered) and 2 tbsp gochujang. Stir to dissolve the paste, then simmer until potatoes are tender, about 15 minutes.

    Cut 8 oz tofu into cubes and add to the pot along with 2 tbsp soy sauce. Cook for 5 minutes until tofu is heated through.

    Slice 4 green onions and stir half into the stew. Serve hot, garnished with the remaining green onions and optional cilantro.
